Wednesday Wonders

Today's Wednesday Wonders: Tomatoes and Maxi's!

One of my favorite things about Summer is the bounty of fresh Vegetables and Fruits everywhere I look!  As I was grocery shopping the other day, I stumbled upon Golden Cherry tomatoes (sunburst tomatoes).
I got very excited and immediately wanted to make this easy, fresh, and delicious Zucchini "pasta" recipe... Mmmm.

Buon Appetito!

Zucchini "Pasta" via Whole Living magazine August 2011 issue

8 oz. cherry tomatoes (and Sunburst cherry tomatoes), sliced
1 clove of garlic, thinly sliced
1/4 cup chopped raw walnuts
2 Tbl torn fresh basil, plus leaves for garnish
2 Tbl extra-virgin olive oil, plus more for drizzling
Sea salt
1 zucchini, thinly sliced lengthwise, slices cut into 1/4-inch long strips (so it looks like thin, long pasta)

Directions:
In a bowl, combine tomatoes, garlic, walnuts, basil, and oil.  Season with salt.  Let stand 20 minutes.  Toss with zucchini and garnish with basil.

And now my little fashionistas....MAXI time.  A Maxi skirt (or dress) is one thing I would seriously wear every. single. day. for. the. rest. of. my. life.

Some Maxi skirt inspiration from these lovely ensembles:

Happy Wednesday!!  I hope your day is fabulous. XoX

I love that you combined tomatoes and maxis in this post!
While I have reported on the maxi trend and featured about 3423492 different maxi dresses/skirts on my blog, I don't actually own a maxi. I'm short and small, so I feel like I would drown in the material. I know other bloggers who are my size and love to wear the maxi trend, but I don't think I could pull off the look as well as them. It just isn't who I am! (Sadly.)

Oh, the pasta looks delicious. And I love the look of maxi skirt. I use to own them but not anymore. Maxi skirt feels great on the skin and makes me feel instantly more feminine. Thanks for the reminder. I need to get some soon!

i'm not the biggest fan of tomatoes, but when the Summer comes and I find cherry tomatoes that are lovely and tasty i can eat them on their own!

this 'pasta' is perfect for this low-carber.
